Domaine Antonin Guyon is a leading Burgundy wine producer based in Savigny-ls-Beaune. It produces Pinot Noir and Chardonnay wines from around 15 different appellations and 48 hectares (120 acres) of estate vineyards spread right across the Cte d’Or. The estate took shape in the 1960s when Antonin Guyon bought several vineyard plots between Meursault and Gevrey-Chambertin. In 1970, his son Dominique added a further 22ha (54 acres) of vineyards within the Hautes Ctes de Nuits zone. Red and white from this appellation form the backbone, in volume terms, of the portfolio. Today, Antonin Guyon has plots in several premier cru vineyards, and most of its grand cru wines come from the Corton hill. In the winery, the white grapes are pressed, and the must spends a short period in tank to allow heavier sediments to settle. The white wines are then barrel-fermented, and then aged in the barrel with weekly stirring of the lees. Most are bottled after 12 months, though the Corton-Charlemagne is matured for a further six. The Pinot Noir is destemmed, and then undergoes a cold maceration before being vinified in open wood vats with twice-daily punchdowns. After a light racking, the wines are matured in oak barrels for 18 months, with a mix of new and used oak.
