From the Republic of Haiti comes this unique rum, made from a particular variety of indigenous, non-hybridized sugar cane called Madame Meuze. The distillation process takes place over open fire in a small pot still, and is overssen by Stephan Kalil Saoud, who has been both a sugar cane producer and distiller since 1989.

Nose: Very elegant and precise aromas.
Palate: Notes of cut grass, basil, sweet pepper and ginger.
Finish: Great elegance and length on the finish.
Distillery Information
Sonson originates from the Cabaret village north-west of Port-au-Prince, and is produced by Mr Stephan Kalil Saoud, a third- generation Clairin maker at the Sonson Distillery, using the Madame Meuze varietal of sugarcanes. Just like its cousins of the same range, and Clairins more broadly, it is wild fermented.
